Two Classes: October 9 & 10, 2026 Autumn Pasta Workshop Celebrate the flavors of fall with an evening of fresh pasta making featuring seasonal Connecticut ingredients and timeless Italian techniques. In this hands-on cooking class, you’ll learn to make two completely different styles of fresh pasta from scratch, giving you the confidence to create authentic homemade pasta in your own kitchen. We’ll begin by preparing a traditional fresh egg pasta dough, then roll, fill, and shape beautiful Butternut Squash Ravioli using locally grown fall squash. The ravioli will be served with a classic sage brown butter sauce finished with Parmesan and crispy sage. Next, you’ll make a traditional semolina and water pasta dough, learning the techniques for shaping handmade Cavatelli. We’ll pair this rustic pasta with Marcella Hazan’s famous butter, onion, and tomato sauce, allowing the simplicity and richness of this iconic Italian recipe to shine. Throughout the class, we’ll discuss the differences between egg dough and semolina dough, when to use each, proper mixing and kneading techniques, shaping methods, and tips for cooking fresh pasta perfectly every time. This relaxed, hands-on class is perfect for beginners and experienced home cooks alike.
